Beach Buggy Racing got predictably eliminated due, I think, to relative obscurity. Haven’t played much any of these except a tiny bit of Mario Kart 64...

I'll vote Mario Kart 8 just due to the shear amount of content included. It's also really approachable with the controller options and smart steering.

It feels a bit safe to label the latest Mario Kart entry as the best mascot racer, but I don't think it's far from the truth. Tight gameplay while being beginner friendly, wide track selection from the series history, tons of mascots to play as including non-Mario ones, and in the Switch version the battle mode is fixed.
